Batch Cooking by the Numbers: What Doubling a Recipe Actually Costs

TL;DR: We re-ran the package math on 748 fully priced dinner baskets as if each recipe were doubled. The median doubled basket costs 48% more than the single batch, not 100% more, so cost per serving falls about a quarter. Across 4,928 ingredient lines, 63% needed no extra package at all. The free food is in the spice, dairy and pantry lines. You pay full price again for meat, cans and seafood.

Doubling a dinner costs about 48% more, not twice as much

Cook twice the food and you do not pay twice the money. Across 748 dinner baskets priced item by item at a real Kroger store, doubling the recipe raised the register total by a median of 48%. The middle half of recipes landed between 32% and 65% more, and 96.7% of them cost less than double.

Turn that into the number that matters at the table. Doubling multiplies servings by two while multiplying the basket by about 1.48, so cost per serving drops to roughly 74% of the single-batch figure - a 26% cut for the median recipe, and an 18% to 34% cut across the middle half. Our median dinner of $4.62 per serving becomes about $3.42 per serving when you cook it twice over.

How we modeled a doubled batch

Every basket in our corpus already stores what a shopper actually buys: the matched shelf product, its package size, its price, and how many packages the recipe forces into the cart. To model doubling we doubled each ingredient's required amount and re-ran the same package-count math, then compared the two register totals.

The rounding rule is the one we already use when turning a recipe list into a shopping list: round up to whole packages, with a 10% grace so that 30 ounces of tomatoes means two 14.5-ounce cans rather than three. That rule reproduced the stored package count on 4,922 of 4,928 modeled lines, which is why we trust it to model the doubled version.

Two honest limits. First, 28% of ingredient lines could not be modeled precisely, mostly where a recipe counts items ("2 chicken breasts") and the store sells by weight; for those we assumed the worst case, that the line's packages double. Second, this is a pricing model, not 748 doubled dinners cooked in a kitchen. On the 75 baskets where every single line could be modeled exactly, the median increase was 37% rather than 48%, so the real answer is likely a little better than the number we lead with.

What the second batch actually costs

The spread matters more than the median. About half of all recipes double for 50% more or less, one in six doubles for under 25% more, and a small group doubles for nothing. At the other end, 3.3% of recipes gain nothing at all from batching, because the first batch already used up every package it bought.

In dollars, the average basket in this set ran $30.22 as a single batch and $44.56 doubled. The second batch costs $14.34 - about 47% of what the first one cost, for the same amount of food.

Where the free food hides

The saving is not spread evenly across the shopping list. We checked every modeled ingredient line to see whether the packages already in the cart covered a doubled amount. Sixty-three percent did. Sorted by category, the pattern is stark: seasonings and refrigerator staples are nearly always free to double, while proteins and cans almost never are.

This is a useful shortcut when you are standing in the kitchen deciding whether to scale a recipe up. Look at the protein and the cans. If doubling the recipe means one more tray of chicken and one more can of tomatoes, that is your whole extra bill - the paprika, the milk, the olive oil and the onions come along for free.

Two baskets that double for nothing

Five baskets in the set cost exactly the same doubled as single. The clearest is the pumpkin mac and cheese for one, which we flagged in our post on small-yield recipes as a $15.19 basket producing a single plate of food, largely because one teaspoon of deli mustard drags a $4.49 jar into the cart.

Double it and the total stays $15.19. Quadruple it and the total still stays $15.19: the recipe needs 105 grams of pasta from a 16-ounce box, 23 grams of cheese soup from a 10.5-ounce can, 30 grams of pumpkin from a 15-ounce can. Four servings from the same cart drops the cost from $15.19 per serving to $3.80.

The two bean chili tells the same story with dinner-sized portions. Its basket is $19.36 either way, because the recipe asks for half a pound of ground beef from a one-pound tray and half a can each of kidney and cannellini beans. Doubling it just finishes the packages you were already charged for.

The recipe that doubles at almost full price

Batch cooking is not free money, and the counterexample is instructive. A lentil spaghetti sauce priced at $23.95 as written costs $46.71 doubled, a 95% increase that makes batching nearly pointless. Nothing about the recipe is unusual. It is five lines long.

That is precisely the problem. The recipe uses a full pound of ground beef, a full 16-ounce bag of lentils and a 32-ounce jar of sauce that costs $10.49 by itself. Every one of those lines is already consuming its whole package, so the second batch buys a second copy of everything except the onion. When a recipe is written to use whole packages, there is no slack left to harvest.

Short ingredient lists double worst

That pattern holds across the whole corpus, and it runs opposite to intuition. Recipes with five or fewer ingredient lines cost an average of 63% more to double. Recipes with 16 or more lines cost only 42% more. Simple recipes are the expensive ones to batch.

The reason is that a short list is usually a list of whole packages: a can of beans, a can of corn, a can of tomatoes, a spoon of chili powder. Our 3-can chili costs $5.49 and doubles to $8.49, a 55% increase, and the only line that came along free was the chili powder. A long ingredient list, by contrast, is mostly small quantities drawn from big packages, and small quantities are where the slack lives.

Doubling is the cure for the small-yield tax

The strongest case for batch cooking is not a stockpiled freezer. It is that scaling up is the direct fix for the most expensive structural mistake in home cooking: a recipe that makes too few servings. We measured that tax at a median $12.48 per serving for recipes yielding one or two servings against $2.49 for recipes yielding nine or more.

Those numbers come from nearly the same register total, which is the whole point. A basket that costs $23 to $26 either way is a bad deal at two plates and an excellent one at ten. Doubling moves a recipe one full step up that curve for roughly half the price of a second basket, which is why cost per serving is the only figure worth comparing.

Which dishes are actually worth doubling

Here is the finding that surprised us most: dish type barely changes the cost of doubling. Grouping baskets by style, the average increase ranged only from 39% for pasta dishes to 52% for soups, stews and chilis. Casseroles, rice and bean dishes, salads and seafood plates all landed between. Cost gives you almost no reason to prefer one style.

So choose by how the food keeps, not by how it prices. University of Minnesota Extension's storage chart puts cooked leftovers at 3 to 4 days in the refrigerator, with soups, stews and cooked meat dishes holding 2 to 3 months in the freezer and cooked poultry and fish dishes 4 to 6 months for quality.

Texture is the practical filter that no chart covers. Braises, chilis, stews, sauces, casseroles and cooked grains reheat close to how they started. Anything crisp does not: breaded cutlets, roasted potatoes and fried items go soft in the fridge and worse in the freezer. Freezer burn is a quality problem rather than a safety one, but it still ruins the meal you were counting on, so use flat, well-sealed containers and eat the doubled half within weeks rather than months.

The catch: a doubled batch only saves if you eat it

Every number in this post assumes the second batch gets eaten. If it does not, doubling is a way to spend 48% more on food you throw away. The EPA reports that a third of all food in the United States goes uneaten and that the average family of four spends almost $3,000 a year on food that never gets eaten.

That is why we treat batching as one half of a pair. The other half is cooking from your remainders: the leftover rice, the two-thirds of a can, the rest of the cheese. Doubling harvests the slack in a single recipe; remainder planning harvests the slack across a week, and the two together are where the real weekly savings come from. Our own priced weeks showed the effect plainly, with a $34.60 week followed by a $13.91 one because the second week was planned around what the first had left. The cost of food waste is the tax on doing neither.
